As of last Friday, I officially have one year until I say I do! I can't believe how fast time went, and I can only imagine how quickly these next 12 months are going to go. Ah! Now it’s all really starting to sink in how close the big day actually is — and the need to lose the weight and plan the wedding of my dreams are both top priorities in my mind.
Last week, Rene and I attended a bridal expo on Monday and Tuesday night, where we met with various vendors and were able to schedule appointments and get information. So far, we decided on our florist and picked out the centerpieces, booked our photo booth (which was a must-have for Rene and me), and decided on a few little surprises we want to have at the reception. My next step to check off my list is finding a photographer and videographer. I know how important it is to find a great one, and I want to get my engagement photos done soon to get out my save-the-dates. Saturday morning, we met with a photographer/videographer, but I wasn't too impressed, so I need to make more appointments for this coming weekend. I need to find the perfect fit for us, and if it takes a few weeks to find it, then it’s all worth it.
Aside from all the wedding-planning we did this week, I had a very successful weigh-in and was down three pounds on Sunday morning! During the week, I did a half hour on the elliptical on Tuesday morning, took a spin class on Wednesday morning, did weight training from Bonne's routine on Thursday, and took a spin class on Saturday. As far as dieting, that was a success for me as well! For lunches, I made tuna with low-fat mayo and celery and put it on cut up cucumbers (for Rene, I added some turkey breast roll-ups) for a few days and had salad for the rest of the week.
My favorite dinner of the week was Weight Watchers Eggplant Rollatini. It's baked, not fried, yet was just as delicious! I served it with a salad on the side and had enough for leftovers the next night.
The only night I cheated was Thursday night, but for good reason — it was our menu tasting at our venue! It was unbelievable how much food there was, and everything was so delicious, so I know I have nothing to worry about. Our banquet manager also sat down with us to chat, and she was able to answer any questions we had and give us some ideas on personalizing our special day. It was a great night, especially since we were celebrating our one-year countdown! I highly recommend planning a tasting at your venue if you haven’t yet, because you get to really decide on what you want on your menu.
All in all, it was a great week and a great start to fulfilling my November goals.
